With the recent craze over Dalgona coffee, we thought that we'd try a Keto version of the coffee sensation so that people who are on keto ( or abstaining from sugar) will not miss out!
It is a very simple three ingredient recipe that takes minutes to whip up!
We will be using Xylitol as the sugar replacement for this recipe as other sugar replacements such as Erythritol do not tend to hold up well in the mixture.
The ingredients are (serves two):
- 4 grams of freeze dried instant coffee ( We recommend getting Essenso microground coffee)
- 40 grams of Xylitol*
- 40 ml of hot water
- Place all ingredients in a mixing bowl and start mixing. We recommend using an electric mixer because it can take quite a while before the mixture forms into the froth. Otherwise, you could simply use a regular whisk and patiently whisk it into shape.
- It takes around 3-4 mins of whisking on an electric mixer and 9-10 mins of vigorous whisking by hand for the mixture to form. It could take a little longer but just keep whisking and it will eventually come together.
Once it is done, simply spoon the Dalgona mixture onto a glass filled with ice and your favourite milk alternative ( we recommend almond or coconut milk).
* Xylitol is extremely toxic to dogs and cats
